			<content:encoded><![CDATA[<p>Sometimes I feel the need to cook a meal, and I don&#8217;t mean your regular student meal. One such meal is possibly one of the <em>few</em> sea food dishes that I love, the reason why I love it is the gratuitous amounts of cheese involved.<br />

<h3>Ingredients:</h3>
<ul>
<li>2 1/2 cups of Fresh Cod fillet</li>
<li>2 cups milk (make sure its more than 2%)</li>
<li>1/4 cups flour</li>
<li>1/4 cup butter<strong>*</strong></li>
<li>1/2 teaspoon salt</li>
<li>1/8 teaspoon pepper</li>
<li>As much grated cheese as you want. depends on how cheesy you want the sauce to be.. A combination of Mozzarella and Cheddar works.</li>
</ul>
<p><strong>*</strong> You can omit the butter if you do not want the dish to be fatty&#8230; just remember doing so might unleash the angry ghost of <a href="http://en.wikipedia.org/wiki/Julia_Child" target="_blank">Julia Child</a>.</p>

<ol>
<li>Pre-heat oven to 350F/177C,</li>
<li>Melt butter, add flour, salt, and pepper,</li>
<li>Stir to make a paste,</li>
<li>Add milk and cheese, cook until it thickens. <strong>Make sure to constantly stir it</strong>,</li>
<li>Grease a 2-quart Casserole, you can also use <a href="http://www.amazon.ca/Kitchen-Basics-Onion-Soup-Bowl/dp/B002T0GEHM" target="_blank">Onion Soup bowls</a> if you want a personalized dish,</li>
<li>Pour a little of the sauce on the bottom,</li>
<li>Add a layer of Cod</li>
<li>Repeat steps 6 and 7 until you fill the bowl</li>
<li>Cook for 20-30 min, until nicely browned</li>
</ol>
